You recognize food safety risks and you know the appropriate working methods to guarantee food safety. You demonstrate familiarity with the regulations of foodstuff and facilities based on legislation essential to professional kitchens. Students are capable to plan and carry out house-control.

What is the implementation of the regulations of food legislation in professional kitchens? Which are the risks concerning work with foodstuffs? How do you handle foodstuffs in a safe way? Which equipment, methods and cleaning agents are used in cleaning?
